frackin delicious+decently healthy oatmeal chocolate chip cookies
ok...these....are so good.....
I wasn't expecting them to turn out well actually because if we're being honest...healthy treats never really do. THAT BEING SAID, these have those lovely crisp edges, chewy interior, and are studded with deliciously melty chocolate chips.
Just a note, the wet ingredients might seem too watery at first but don't worry, the oats really just soak up most of the liquids.
Ingredients:
-3tbsp unsalted butter, room temp
-1 large egg
-1/4 cup honey
-1/2 cup brown sugar, packed
-1tbsp water
-1/2 cup whole wheat flour
-2tbsp flax seed meal
-1/2tsp baking soda
-1/2 tsp salt
-1 1/2 cup old fashioned oats
-1/2 cup chocolate chips (or raisins if that's your jam)
Method:
-Preheat oven to 175 F (350 C) and line cookie sheets with parchment
-With a hand mixer/electric mixer, beat together butter, honey, sugar, water, and egg
-In a medium bowl, mix together flour, flax, baking soda, salt, and oats
-Gradually add dry to wet, either with the mixer on medium speed or by hand, until just combined
-Stir in chocolate chips/raisins
-Scoop dough by tablespoons onto the baking sheet and gently flatten
-Bake 11-13 minutes, until just browned
-Cool completely
