iced pumpkin cookies
if you don't like these then who even are you.
Ingredients:
-2 1/2 cups all-purpose flour
-1 tsp baking powder
-1 tsp baking soda
-2 tsp ground cinnamon
-1/2 tsp ground nutmeg
-1/2 tsp salt
-1/2 cup butter, softened
-1 cup white sugar
-1/2 cup brown sugar
-1 cup+an ounce or so of pumpkin puree
-1 egg
-1 tsp vanilla
glaze:
-powdered sugar
-milk
-pinch of salt
-cinnamon
(eyeball all of these idk)
-preheat oven to 175 C
-combine flour, baking soda, baking powder, cinnamon, nutmeg, salt
-in a separate bowl cream together butter and sugars
-add pumpkin, egg, and vanilla to butter mix and beat until creamy
-mix in dry ingredients
-drop on cookie sheet (about a tablespoon)
-bake 15-20 mins (my oven sucks so i do 20)
-cool the cookies and then dip in the glaze. place on wire rack and let excess drip off
-glaze: combine sugar cinnamon
Preheat oven to 350 degrees F (175 degrees C). Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt; set aside.
In a medium bowl, cream together the 1/2 cup of butter and both sugars. Add pumpkin, egg, and 1 teaspoon vanilla to butter mixture, and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls; flatten slightly.
Bake for 15 to 20 minutes in the preheated oven. Cool cookies, then dip cookies inot the glaze and set on a rack so the excess can drip off
To Make Glaze: Combine confectioners' sugar, milk, 1 tablespoon melted butter, and 1 teaspoon vanilla. Add milk as needed, thin enough to drizzle but thick enough to get a nice coating
